Ingredients
12 standard muffins
- 200 grams orange, approx 1 large, quartered
- 150 grams raw sugar
- 1 egg
- 100 grams oil, i use "light" olive oil but any neutral flavoured oil fine
- 120 grams Milk
- 280 grams flour, *see notes for my GF flour mix
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 70 grams choc chips, optional

I'm cooking this todayRecipe's preparation
preheat oven to 200degF
Blitz orange & sugarfor 10sec sp 8
add egg, oil, milk
mix 5sec,sp 5
add flour, BP & baking soda
mix 5sec, sp5
add choc chips if wanted & mix reverse briefly to incorporate
i use silicon muffin cups, cook 12-15min
Gluten Free whole orange muffins
Tip
these are delicious & moist with a lovely orange flavour
My Gluten Free flour mix is rice flour, corn flour, ground almonds, & xantham gum. After lots of trial & error, i have found this is the best combination for baking as it isnt dry.
I will post the combination ratios seperately.

So incredibly easy and fast to bake and wonderfully yum I used a commercial gluten free self raising flour this time but will give your personal mix a try next time. Thank you for sharing.

I cooked this tonight and made it with your special gf flour recipe. These are the best gf muffins ever, nice and moist and so close to a regular muffin taste. I then used your recipe with regular flour for the kids which also turned out great. Thanks so much for taking the time to perfect as the commercial mixes are dry like you say, i will be making up a container of it ready to use.
My GF baking mix combo is:
320gm Rice flour
240gm Cornflour
100gm Almond meal
2 tsp xantham gum
mix together and use as you would plain flour for baking. I've been really impressed how this works as it isnt dry like commercial GF flour mixes.
