  • 250 grams almonds
  • 40 grams ground Flaxseed
  • 300 grams Well ripened bananas, Around 3 whole bananas
  • 3 eggs
  • 40 grams honey
  • Half level teaspoon Ground Cinnamon.
  • 1 level teaspoon vanilla extract
  • 45 grams macadamia oil
  • 1 level tablespoon lemon juice
  • Half heaped teaspoon bicarb soda

Recipe's preparation

  1. Preheat oven to 180degrees celsius

  2. Weigh 250grams of almonds into Thermomix bowl. Mill for approximately 20 seconds on Speed 8

  3. Add flaxseed, bananas, eggs, honey, cinnamon, vanilla extract, and oil Into bowl. Beat on Speed 5, 20 seconds. Remove lid and scrape down sides of the bowl.

  4. Measure one tablespoon of lemon juice into a cup and stir in a half teaspoon of bicarbonate soda, to activate soda.

     Add to the batter, by pouring through the hole in the lid of the jug. Again quickly beat for around 15 seconds on speed 5.

    Pour batter into a greased and lined small loaf tin.

    Bake in moderate oven for approx. 45 minutes. Banana bread is cooked when inserted skewer comes out dry.

    Allow to cool slightly in baking tin, before inverting onto a cooling rack.

Tip

I like to slice into portions and wrap individually I keep these in the freezer and pull out as needed. I lightly cook slices in a sandwich press between two sheets of grease proof and eat for breakfast, spread with some fresh butter.
