Ingredients
Banana Bread
- 280 grams Ripe banana, Cut into pieces
- 3 eggs
- 2 tablespoons honey
- 1 teaspoon Vanilla Exract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 tablespoon lemon juice
- 260 grams almond meal
- 30 grams Linseeds (or Chia Seeds)
- 50 grams olive oil

1. Preheat your oven to 160 degrees and line bread tin
2. Place banana, honey, oil, cinnamon, vanilla, eggs, baking soda and lemon in on speed 6/ 10 seconds.
3. Add almond meal and linseeds into speed 5/ 10 seconds
4. Place mixture into the lined bread tin and bake for 50 minutes (or until an inserted skewer comes out dry).
5. Let the bread sit in the tin for 10 minutes before removing to cool.

Fantastic!! So easy! I had to use up all my bananas so nearly doubled the quantities (TM5 though) & used chia seeds instead of linseeds! Kids loved it almost as much as me! Thank you!!

Is this banana bread suitable for freezing.
Excellent and simple recipe. I used 360g of bananas, about 30% more than the recipe. So I increased the amount of the rest of the ingredients by 30%, amounting to an extra 70 g of buckwheat flour, an extra egg, 40 g of chia seeds and a bit more of the others. I used coconut oil instead of olive oil. Very nice indeed!
Made this yesterday and it was amazing! Will definitely be a go to favourite 👍
