Healthy Coconut & Oat Slice
- 100 g coconut milk
- 50 g unsalted butter
- 40 g brown sugar
- 50 g honey
- 200 g oat, rolled
- 50 g almonds
- 10 g pistachio nuts
- 1 level tbsp vanilla extract
- 50 g dessicated coconut
- 5 g chia seeds
- 5 g pumpkin seeds
- 5 g Goji Berries

- 1.) Preheat oven to 180 degrees celcius
2.) Line baking tray
3.) Place almonds & pistachios into TM & roughly chop, speed 3, 10 seconds. Place aside, but don’t wash TM.
4.) Place butter, honey, sugar & Vanilla essence into TM and melt over 4 mins, 100 degrees, speed 2
5.) Add chopped nuts, oats, coconut, chia & pumpkin seeds, and goji berries. Replace lid, but leave measuring cup off & mix for 20 seconds, speed 2. As the ingredients are mixing pour in the coconut milk.
6.) Pour the mixture into baking tray.
7.) Cook for 15 minutes, then place aside to cool before slicing.

Tip
If they turn out too crumbly for your liking, just add more butter, or try about 10g coconut oil for a healthier option.
