Ingredients

Brownie Mix

  • 100 g plain flour
  • 40 g cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 100 g Butter
  • 85 g brown sugar
  • 100 g raw sugar
  • 2 eggs
  • 1 teaspoon Vanilla Bean Paste
  • 100 g chocolate chips (mix of white, milk and dark)

Recipe's preparation

    Brownie Mix
  1. Preheat oven to 160 degrees fan forced (170 degrees conventional).

    Place flour, cocoa, baking powder and salt into mixing bowl. Set to Turbo, 3 times on 2 seconds. remove from bowl and set aside.

  2. Place butter, sugar and brown sugar in mixing bowl and blitz, speed 5, 30 seconds. Scrape down the sides of the bowl with spatular.

  3. Blitz for a further 40 seconds, speed 4. Whilst blitzing, add eggs and vanilla bean paste through lid opening.Scrape down the sides of the bowl with spatular.

  4. Add reserved flour mixture to the bowl and combine on speed 4, 40 seconds.

  5. Add chocolate chips and combine on speed 1, Counter-clockwise operation"Counter-clockwise operation" , 20 seconds.

  6. Pour mixture into a lined 20cm square cake tin.

    Bake for 20 minutes - this will make your brownie firm to the touch. If you prefer a gooey brownie, check your brownie with a skewer on the 15 minute mark and monitor to check for desired gooey-ness.

  7. Allow your brownie to cool slightly and cut into 12 portions.

    Serve with vanilla ice-cream and enjoy!

Tip

To add some extra crunch, place 50g roughly chopped walnuts into the mix at the same time as the chocolate chips.

    First thing my daughter made in the Thermie! First thing my daughter made in the Thermie!

    My daughter just arrived home having finished Uni - first time she had seen my new Thermie, and she made these for her father for his birthday tomorrow.

    Given she had never used or seen a Thermie before they worked out pretty well!

    Perfect in every way....I doubled the mixture and added 15 mins to cooking time.The teenagers came back for seconds !
