Ingredients

Buns

  • 280 g Milk
  • 15 g dried yeast
  • 80 g Butter
  • 1 egg
  • 2 tsp cinnamon
  • 40 g sugar
  • 500 g bakers flour
  • 3 tbsp cocoa
  • 1 tsp salt
  • 60 g Currents
  • 180 g mixed chocolate chips (milk, dark and white)

Cross Mixture

  • 80 g plain flour
  • 80 g cold water
  • 1 tsp oil

Sugar Syrup

  • 2 tbsp water
  • 2 tbsp raw sugar

Recipe's preparation

    Buns
  1. Pre-heat oven to 190 degrees (fan forced).

  2. Add milk to mixing bowl and heat 1 minute, 100 degrees, speed 1.

  3. Add ingredients in this order: yeast, butter, sugar, egg, cocoa, cinnamon, salt and flour. Mix for 6 seconds, speed 6.

  4. Set to Dough mode"Dough mode" and knead for 5 minutes. Add currents and Dough mode"Dough mode" for a further 30 seconds. Allow dough to sit for 5 minutes to cool slightly in the bowl. Then add frozen chocolate chips and Dough mode"Dough mode" for a further 1 minute.

  5. Turn the dough out onto a silicone mat and wrap. Allow to prove for 1 hour or until doubled in size.

  6. Whilst dough is proving, clean and dry mixing bowl. Place flour, water and oil into bowl and mix 30 seconds, speed 3. Pour mix into piping bag and set aside.

    Clean and dry bowl. Add sugar and water and heat for 2 minutes, 100 degrees, speed 4. Place in cup and set aside.

  7. Break dough into portions and form into breadrolls. Place together on a lined baking tray and pipe with crosses. Allow to prove for another 10 minutes.

  8. Place buns in the oven and bake for 15 - 20 minutes until cooked through. Remove from oven and brush with sugar syrup.

Tip

Freeze your chocolate chips so that they keep their form whilst cooking.
