Ingredients
Cup cake batter
- 1/2-1 cup honey, to your desired sweetness
- 1/2 cup coconut oil
- 2 eggs
- 2 tsp vanilla extract
- 2 cup spelt flour
- 2 tsp Bakeing Powder
- 1/2 cup coconut milk
- 1/2 cup Shreaded Coconut, (I used the pulp from makeing the coconut milk)

Pre heat oven to 175 deg
mix honey and oil sp 4 for 5 sec
Add eggs and vanilla extract sp 4 for 5 sec
Add remaining ingredients sp 4 untill completly combined and smooth
Bake for 20-25 min
I made these into butterfly cakes for my daughters birthday but they are yummy as they are with no iceing. You could also add choc chips, saltanas, berries whatever flavour combo you like.

Yum! Light, fluffy and you can be creative with inclusions. Raspberries, blueberries, choc chips, sultanas, goji berries, chia seeds, poppy seeds....add a little lemon juice for a lemon flavour too
Weight conversions:
100g coconut oil
150g honey/rice malt syrup
30g coconut
260g flour
110g coconut milk
Did mini muffins and only took 12 minutes to cook.

Delicious! Very light and easy to make. I made these as mini-muffins for my toddler...he's still asleep and I've already scoffed three, so he might want to wake up soon.
Would be helpful to have the quantities in grams instead of cups, but I eyeballed the measurements and it worked out fine.
These are delicious!!! So easy to make, great alternative to the same old chocolate cake. My picky little boy even loves them! We send them to kindy in his lunchbox. We prefer gluten free but it's hard to make gf stuff for kindy not being able to take nuts. We seem to tolerate spelt pretty well (much better than wheat!) so these are awesome for us. I make a big batch and freeze them individually then they are defrosted by the time he eats them. Thanks for a great recipe xo
