Ingredients

For Biscuits

  • 70 g dried cranberries
  • 150 g unsalted butter cubed
  • 110 g brown sugar
  • 1 --- egg, lightly beaten
  • 2 teaspoons vanilla extract
  • 130 g Self Raising Flour
  • 1 pinch salt
  • 180 g rolled oats
  • 170 g White Chocolate Chips

  1. Pre-heat Oven to 180 degrees celsius.  Line 2 baking trays with Baking Paper.

  2.  

    Place cranberries in TM bowl and chop on speed 7 for 3 second (or until desired size).  Set aside.

     

    Melt butter in the TM bowl, 45 seconds, 50 degrees, Speed 2. 

     

    Note: the butter doesn't have to be full melted (just softened enough so it mixes easily)

     

    Add brown sugar to TM bowl and mix for 30 seconds, speed 3, on the reverse setting.Counter-clockwise operation"Counter-clockwise operation"

     

    Add egg and vanilla extract to TM bowl and mix for 30 seconds, speed 3, on the reverse setting.Counter-clockwise operation"Counter-clockwise operation"  

     

    Add remaining ingredients to TM bowl (including cranberries) and mix for 1 minute, speed 1, on the reverse setting.Counter-clockwise operation"Counter-clockwise operation"  

     

    Tip mixture on non-stick baking mat or board.

     

    Gently roll / knead mixture into a ball shape so that all ingredients are mixed.

     

    Roll approximately 1 tbs of the mixture into a ball shape between your hands and gently flatten (either with your hands or with a fork that has been dipped flour once on the tray).

     

    Place in the oven and cook for approximately 12 minutes.  The biscuits are done when the edges begin to brown.

     

    Allow to cool on baking rack and enjoy!

    I made these cookies because I wanted a different recipe than the choc chip cookies on my recipe chip. They were delicious. I did not have white choc chips so used the specified amount of dark choc chips. Next time I will use a mix of dark choc chips and white choc chips and will also use sultanas. The cranberries were dried and the full flavour did not come through somehow, which was disappointing. If anyone has any suggestions in regard to this problem, I would appreciate knowing since I enjoy the flavour of cranberries. We cannot get fresh cranberries here in Perth, Western Australia to my knowledge.

    I replaced the cranberries with sour cherries and added half the Choc chips plus the remaining weight in walnuts. Delicious!!
