LEMON,YOGHURT AND OATMEAL MUFFINS
- 180 grams wholemeal /spelt or glutenfree four
- 120 grams rolled oats
- 50 grams raw sugar
- 1 level tsp bakingpowder
- 1/2 level tsp bicarb soda
- 1 pinch salt
- 150 grams yoghurt
- 1 egg
- 2 level tbsp lemon juice
- 1/2 lemon zest
SYRUP (to brush over warm muffins)
- 30 grams raw sugar
- 1/2 lemon zest
- 1 level tbsp lemon juice

Grind lemon rind and sugar10 sec on speed 9
Add flour ,oats ,baking powder ,bicarb soda & salt
Closed lid positions Turbo 3 -4 short pulses
Add yoghurt, egg, lemon juice Mix 10 -15sec on speed 5
Bake in muffin tray for 20 min.
Grind lemon rind with sugar10 sec speed 9
Add lemon juice 2min 90deg speed1
Brush over warm muffins

Add a can of mixed fruit for a bit of variety

I agree with Pousie's comments. These tasted quite nice and lemony. The mix did seem a bit stiff and overprocessed so the muffins were quite dense. I'll make these again with a bit more liquid perhpas on reverse at a lower speed and cook at a lower heat with my fan forced oven. I did enjoy using the thermomix to turn raw sugar into castor sugar and the lemon rind into finely grated rind - this worked very well. Thank you for the recipe
I added some milk to this - probs about 1/3 cup. it was too thick otherwise. also i baked them in the oven - 170 degrees for about 15 mins. they were nice - particularly with the syrup on top but dont expect light and fluffy muffins - it is more of a scone like texture
