Ingredients

Lemon Madeira Cake

  • 150 grams caster sugar
  • 60 grams almond meal
  • 3 eggs, at room temperature
  • 60 grams freshly squeezed lemon juice
  • 1 level tablespoon lemon rind
  • 120 grams Self Raising Flour
  • 175 grams Butter, softened
  • 1 level teaspoon vanilla extract

Recipe's preparation

    Method
  1. Preheat oven to 170 degrees and grease a 8 cm x 20 cm loaf tin.

    Add butter to TM mixing bowl and heat 60 secs/50 degrees/speed 1.

    Add sugar, lemon rind and vanilla into TM mixing bowl and blend 60 secs/speed 5. Scrape down sides with spatula.

    Turn dial to speed 5 and keep mixing bowl running and gradually add one egg at a time and let it run for 60 secs. Scrape down sides with spatula.

    Add flour, almond meal and lemon juice over the butter mixture and blend 15 secs/speed 5. Scrape down sides of TM mixing bowl and blend a further 15 secs/speed 5.

    Empty contents of TM mixing bowl into cake tin. To remove the excess batter from the blade - turbo/ 1 sec x 3. Scrape out excess batter from TM mixing bowl.

    Bake for 45 mins or until cooked when tested with a skewer.

    Cool in tin for 5 mins then turn onto a wire rack to cool completely.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
