Ingredients

Base

  • 160 grams plain flour
  • 30 grams Shredded coconut
  • 60 grams caster sugar
  • 90 grams Butter
  • 2 tsp Grated lemon rind

Filling

  • 400 grams condensed milk
  • 2 egg yolks
  • 1/2 cup lemon juice
  • 2 tsp lemon rind

Meringue

  • 2 egg whites
  • 60 grams caster sugar
  • 40 grams Desiccated Coconut
  • Extra Shredded Coconut

Recipe's preparation

    Base
  1. Preheat oven to 180C. Line a 30cm x 20cm tin with baking paper.

  2. Add all base ingredients into Closed lid"Closed lid" and mix 6 seconds / speed 5.

  3. Press mixture into prepared tin.

  4. Cook for 12-15 minutes or until golden brown.  Remove from oven and stand on wire rack.

  5. Filling
  6. Add all filling ingredients into Closed lid"Closed lid" and blend 5 seconds / speed 2.

     

    Pour over base and cook for a further 10 minutes.

  7. Meringue
  8. Wash and dry Closed lid"Closed lid" really well.

     

    Insert butterfly and egg whites 3 minutes / speed 3.5 without MC, after a minute of beating slowly add caster sugar through hole in lid.

     

    Remove butterfly and fold through desiccated coconut with spatula.

     

    Spread over filling and sprinkle with a little extra shredded coconut, bake for further 10 minutes or until golden brown.

     

    Cool in pan before cutting.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Very yummy & easy. I found using a 20x30cm tin was too big. Next time I will either double the lemon and meringue bit (as i found the base thick enough still) or use a smaller tin.

    I used butternut biscuits and butter for the base. I had to blend the filling for about 20 seconds. I didn't use any lemon rind but it really does need it for that extra tang. Next time I'll definitely add it. Family loved the slice.
