- 80 g butter
- 90g caster sugar
- 2 eggs
- 1tsp cornflour
- 1 Tbsp finely grated lemon rind

Preheat oven to 170 Degrees. Line a 18 cm removable base cake tin with baking paper.
Place flour, caster sugar,and butter in TM bowl. Process 5 seconds / Speed 5.
Add beaten egg and mix 45 seconds "Dough mode"
Press 2/3 of the mixture into the base of prepared tin. Place in fridge while making filling.
Insert butterfly whisk. Place lemon juice, caster sugar,butter, eggs, lemon rind and cornflour in TM bowl.
Cook 8 minutes/ 80 Degrees / Speed 3
Pour hot lemon filling on base and crumble the remaining filling on the top.
Bake 20 minutes or until browned.
Serve at room temperature dusted with icing sugar or a dollop of cream.

Wow this tart was brilliant, I made it last night and everyone loved it, it’s definitely going to be my go to dish to impress!
It’s also very forgiving as I made a mistake in the first stage of making the base. I only had normal sugar ( asked for caster sugar), no problem I’ll just blitz, oops to long now have icing sugar.
Then rather then putting in ingredients in order and mixing in 2 separate steps I missed a step( I was distracted) and just chucked everything in and mixed in one step. This may have explained why I had a slightly gooey mixture rather then a crumbley mixture so it was tricky in the last step to crumble remaining mixture on top.

Delicious. Couln't wait for it to cool - had it straight from the oven with vanilla icecream. Cooked in a ovenproof dish as didn't have right size springform tin. Greased it first and it was fine
