Ingredients

Patties

  • 200g Puy lentils
  • a bouquet garni of 5 fresh thyme sprigs, 3 rosemary sprigs, 1 bay leaf and 5 flat leaf parsley stems
  • 1 Tbsp olive oil
  • 1 large onion
  • 2 cloves garlic peeled
  • 1 Tbsp thyme
  • 1 tsp dried oregano
  • 2 tbsp tomato paste
  • 1Tbsp soya sauce
  • 2 slices sour dough bread
  • 1 tsp djon mustard
  • 1 tsp samba oelek
  • salt and pepper to taste

Recipe's preparation

    Patties
  1. Place Puy lentils in simmering basket with bouquet garni.

    Place 800g water in TM bowl

    Cook 20 minutes/100 degress/ Speed 4

    Set lentils aside

     

    Place bread and thyme in TM bowl and turbo at 2 second intervals until breadcrumb consistancy. Set aside

     

    Place onion and garlic in TM bowl.

    Cut 5 seconds/ speed 6

    Scrape down sides

    place oil in Tm bowl

    Saute 5 minutes/ 120 degress/ speed 1

     

    Add remaining ingredients and retun  cooked lentils and bread crumbs to TM bowl.

    Mix on the Dough mode"Dough mode" function for 10 seconds

     

    Shape into patties and set aside in fridge to firm up for 30 minutes.

     

    Meanwhile make the mashed potato on the guided function from the basic cook book. Omit the parmesan cheese and replace with a tsp of grated horseradish.

    Shallow fry patties  in olive oil over a medium heat  until golden on both sides.

     

    Serve patties with mash and  caramelised red onion.

Tip

Use Agria( NZ)  for the mash.

Alternatively serve with a Parsnip mash cooked the same method as mashed potato.

Serve with a pickle, sauerkraut, fermented vegetables, or a crisp salad to compliment the mash and lentils.

These can be prepared up to two days in advance or frozen for later use.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
