Add Coconut Cream, Coconut Milk & Agar Agar to bowl and cook 100 deg, speed 3 for 5-10 minutes (Agar Agar need to reach 100deg and cook for 2 mins)
Allow the mix to cool to about 39 deg then proceed to the Yogurt Automated Recipe of the Thermomix 5. A quick way to get mixture to cool is set on speed 4 without temp MC off for 15 mins. A good idea to put basket on Thermomix to stop splatter
When mixture has cooled to 39 degrees, add remaining ingredients into bowl and set thermomix to Yogurt in the Automated recipe.
After 8 hours when the automated process has finished beat for 15 seconds speed 7. Place in jar in fridge until set. I like to rebeat it at this stage so it becomes a creamy consistancy otherwise it is firm like a jelly. Once you have whipped it again it will remain this consistancy.
Tip
Because coconut milk has a very different structure, we have to use other methods to turn it into creamy, spoonable yogurt: probiotic powder for the health benefits and flavor, and agar agar or tapioca starch for the thickener.
To make coconut milk using the Thermomix. Soak 2 cups of dessicated coconut in 4 cups of water for 2 hours. Then in Thermomix, make sure it heats to 100 degrees, Speed 4 – about 5 mins or so. Then blend for 1 minute on Speed 8. Strain through stainless steel funnel or cheese cloth to create coconut milk.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I’m on a diet that cant have gums or starches. Do you think the recipe would work ok without them? Just not be as thick?
