Ingredients

batter

  • 160 grams buckwheat grains, milled
  • 185 grams plain flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 300 grams Frozen or Fresh Blueberries
  • 1 lemon zested and juiced
  • 1 orange zested and juiced
  • 110 grams raw sugar
  • 2 eggs
  • 80 gram light olive oil
  • 110 grams Milk
  • 55 grams sour cream

Recipe's preparation

    Preheat oven to 200 degrees celsius. Line muffin tray with paper cases and set aside
  1. Mill buckwheat 6 sec/sp 10 or until fine flour consistency.

     

    Combine flour, baking powder, salt and bicarbonate of soda 10 sec/sp 3. Set aside into large bowl.

     

    Add 190 grams of the blueberries into the flour mixture and toss them gently to coat.

     

    Add the lemon and orange rind into TM bowl and zest 10 sec/sp 10.

     

    Add raw sugar and mill 2 sec/sp 9 to make castor sugar.

     

    Add eggs, olive oil, milk and sour cream.Combine 20 sec/  sp 4.

     

    Return flour mixture into TM bowl, mix gently 10sec/sp 3. The batter will look a little lumpy but thats fine.

     

    Divide the batter evenly between the cases. Press a few of the remaining blueberries partly into the top of each muffin.

     

    Bake for about 20 -25 minutes or until the muffins are golden brown and the tops spring back when gently pressed.

     

    Cool the muffins in the tin on a wire rack for 1 minute before removing liners onto rack to cool completely.

     

Tip

You could use wholemeal grains instead of the buckwheat.

I peel the rinds of my citrus fruits very thin with a vegetable peeler. Allow them to air dry and then zest in the Thermomix.

    I used the lemon & orange juice as it was not stated whether to use or not, and put the balance of the milk in as the remainder... Delish! Also used yoghurt instead of sour cream too ✔️
