- 1 stalk Celery, roughly chopped
- 1 carrot, roughly chopped
- 1/2 zucchini, roughly chopped
- 2 kale leaves, roughly chopped
- 1 English spinach or Silverbeet, roughly chopped
- 1 lemon, juiced
- 20 gram EVOO (extra virgin olive oil)
- salt and pepper to taste
- feta cheese, (cubed or crumbled)
- croutons
- 50 grams left over rice or rissotto or quinoa

Add all vegetables into TM bowl with lemon juice, EVOO, salt and pepper. Chop 3 sec/speed 5.
Add rice or rossotto or quinoa and stir 5 sec/"Counter-clockwise operation" /speed 1.
Pour onto salad plate or bowls and add crumbled feta cheese and croutons.
Munch and crunch your way to alkaline heaven.
Tip
Be creative and mix n match any fresh greens you have in the fridge. It's meant to be easy.
Make sure you wash all your veges.
Instead of rice or rissotto toss in whatever grains or seeds you have.
Try making dukkah from your EDC pg 67.
Toss your croutons in EVOO and dukkah before baking in oven 160 celsius.

A bit too much lemon that makes the overall salad too acidic, and it tasted a bit bland, some fresh herbs or spices would help.
Easy and quick to make. Tasty and fresh. Will use this recipe regularly, I think. Might add some mint to it.
This is fantastic!! So easy and you an hide any vegies without other family members even knowing what's in there. I added some tuna at the end for extra protein.
