Ingredients

Cake batter

  • 250 g raw sugar
  • 1 lemon, zest and juice
  • 220 g Butter
  • 2 eggs
  • 250 g natural yoghurt, or natural greek yoghurt
  • 330 g plain flour
  • 2 tsp baking powder

Icing

  • 200 g icing sugar
  • 1.5 tbsp lemon juice
  • water, until desired consistency is achieved

Recipe's preparation

    Cake batter
  1. Preheat oven to 170 degrees celsius.  Grease and line a 20 x 30 cake tin.


     

  2. 1. Place lemon zest and sugar into the mixing bowl and mill 8 sec/speed 9.  Set aside


     


    2. Place butter into mixing bowl and melt 2 min/60deg/speed 4.


     


    3. Return sugar to the mixing bowl and combine with butter 10 sec/speed 4.  


     


    4. With the blades running at speed 4 add the eggs one at a time (should take approx 15 seconds).


     


    5. Add yoghurt, and the juice of the lemon to the mixing bowl and combine 5 sec/speed 5.  Scrape down the sides of the bowl and repeat for 5 sec/speed 5.


     


    6. Add the flour and baking powder to the mixing bowl and combine for 10 sec/speed 4 with the aid of the spatula.


     


    Pour into prepared tin and bake for 45-50 minutes or until a skewer comes out clean.


    Allow to cool in the tin for 5 minutes before transferring to a wire rack.

  3. Icing
  4. Combine all of the icing ingredients in a bowl and mix until combined. Spoon or pour (depending on desired consistency) over the cooled cake.

Tip

You could also use limes in place of the lemon to create a lime yoghurt cake.  In the place of the 1 lemon, use the zest and juice of 2 limes - should give approximately 50g of juice.

    Not a fan I'm sorry, not happy I wasted all those ingredients. The texture was not light and fluffy but more dough-y and like it was undercooked even I cooked for extra time and the skewer came out clean, it started to brown on the edges. We found it tasted bland, whether my lemon wasn't big enough for a lemony hit. Sorry but I won't be making again, I think next time ill use a recipe with less yoghurt as I think that contributes to the texture.

    A great cake, thanks!

    A lovely moist lemony cake, great way to use up yoghurt. I used vanilla pot set yoghurt and it was great.
