  • 250 g shredded or dessicated coconut, to become coconut butter
  • 100 g cacao nibs
  • 250 g pitted dates
  • 100 g dried apricots, Optional - adds sweetness

Recipe's preparation

    Preparation of the paste
  1. 1.  Place the coconut into the TM bowl and mill 2 min/ sp 8.  Scrape down the sides of the bowl and mill again 1 min/ sp 6.  You should now have a very wet spreadable 'butter'.  Set aside.

     

    2. place cacao nibs into the TM bowl and mill 30 sec/ sp 9, (you now have cacao powder), mill a further 30 sec/ sp 9 to release oils and you should have a paste consistency.

     

    3. Add the coconut butter back into the bowl, then add dates and mill 30 sec/ sp 8, taste and decide if you would like to add the apricots, if so add at this point and mill 30 sec /sp 9 at which point you should have a crumbly consistency.  

     

    4.  Empty the 'crumble' into a bowl and using your hands squeeze into walnut sized pieces.  This is quite oily, so don't be surprised.  The balls will harden to a chewy consistency.  They are very rich, so I would be inclined to keep them on the smaller side.

Tip

I wanted to keep this to a maximum of 4 ingredients and I think it is delicious.  You could add orange zest, or cinnamon at step 3 as a variation.
