Ingredients

Dry ingredients

  • 150 grams almonds
  • 150 grams macadamias, or replace with almonds
  • 90 grams Coconut
  • 1 pinch salt

Wet ingredients

  • 4 tablespoons coconut oil
  • 2 tablespoons Maple syrup
  • 1 tablespoon honey
  • 1 --- Juice of a large lemon
  • 3 --- Lemon zests, Alter to suit - I love the lemon flavour

Recipe's preparation

    To Grind Nuts
  1. I used whole nuts and pooped them in bowl for 5 sec on Speed 7.

  2. To melt wet ingredients
  3. If you are making these in summer in NZ or Australia chances are the coconut oil will already be melted and you can miss this step!  

    If not add coconut oil to your bowl and heat 65 degrees for 11/2 Mins on Gentle stir setting"Gentle stir setting" .

  4. To zest lemons - I use my zester from the kitchen tool kit - it is so easy and quick. Then just whizz quickly in bowl.  I have 2 bowls and use them both for this recipe.

  5. Mix altogether
  6. Add the lemon juice, honey and maple syrup  to the bowl.  Then add all hte remaining dry ingredients.  

    Mix together for 10 sec's on speed 5, scrape sides of bowl with your spatular and repeat 10 sec's on speed 5.

     

  7. Roll into small balls (I make 30) in the palm of your hand and then roll in some coconut on your Thermomat.

    Leave in fridge for a few hours to harden.

    Enjoy!

    Great for take a plate at work.

Tip

Mix and match ingredients to suit what you have in pantry or to taste.

Use all maple syrup or all honey.

Change nuts - I often use just almonds.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
