Ingredients

Fritters

  • 150 grams cheese, Tasty Cheddar
  • 1 red pepper, De-seeded and cubed
  • 410 grams corn kernels, Tin, drained (doesn't need to be exact weight)
  • 1 pinch salt & pepper
  • 1/4 teaspoon chilli powder, Optional and can put more or less according to taste
  • 2 eggs
  • 115 grams Milk
  • 74 grams plain flour, Or change for gluten free version
  • 1 teaspoon baking powder, Use gluten free if wanting GF version

Recipe's preparation

    Mixing Fritter Batter
  1. Add grated cheese or cheese in pieces and grate in bowl for a few seconds.

    Add all the rest of the ingredients and mix on Counter-clockwise operation"Counter-clockwise operation" for 1 min or until desired consistency.  Add more flour if you want a thicker batter and more milk if you want a thinner batter.

     

  2. Cooking Fritters
  3. Heat oil (olive or coconut for example) in a pan on medium/hot heat, not too high. 

    Add about a tablespoon at a time to form round circles.  Keep checking after a few minutes to see if they are brown, if desired colour flip them and cook for further minute till brown.  

  4. Keep warm
  5. Put into Thermoserver lined with kitchen towel to keep warm. Cover with another kitchen towel to prevent them going soggy, rather than the lid.

    Repeat until you have used up all the batter.

  6. Serve
  7. Serve with a fresh green salad and /or the beetroot and carrot salad.  Delicious!

Tip

Add or replace ingredients - the ones in the photo were minus the red pepper as I didn't have one, but they do look a lot nicer with one!

Add sun-dried tomatoes - adds colour and a lovely flavour.

Kids love helping to make them, and they fill the house with a lovely appetising aroma!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Glad you liked it - I will have to try with frozen vege's, great idea!

    Great, easy recipe.

    Some of the directions are left to the user to work out, but it was good to use my brain instead of blindly following exact directions.

    I didn't have any corn (I noticed after I'd started making the recipe!), so I added some frozen vegies. I blitzed them on speed 8 for 4 seconds, which gave a lovely texture.
