Ingredients

cake

  • 2 Lemons to zest, Reserve juice for syrup
  • 200 grams caster sugar
  • 250 grams Self Raising Flour
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 250 grams soften butter
  • 4 eggs

Syrup

  • 150 grams caster sugar
  • all juice of the 2 lemons

Recipe's preparation

  1. Pre heat oven t0 165 degrees celcius

  2. grease 18 cm Round, non stick tin

  3. use potato peeler to peel both lemons adding the peel/ zest to the bowl.  ( reserve both lemons for jucing for syrup )

    Closed lid"Closed lid" 5 seconds speed 8     scrape down sides

  4. add caster sugar,  Closed lid"Closed lid"   10 sec speed 10, scrape down sides

  5. Add self raising flour, salt, baking powder , combine Closed lid"Closed lid"      5 sec speed 7, scrape sides.

  6. add eggs and softened butter, Closed lid"Closed lid" 10 sec speed 7, scrape sides, repeat 10 sec speed 7

  7. pour into prepared tin and bake for 60 mins ( untill golden brown )

  8. Turn out cooked cake onto serving plate upsidedown.

  9. SYRUP
  10. Add juice of both lemons and caster sugar .

    Closed lid"Closed lid" 5 mins ,60 degrees, speed 2

  11.  slowly pour syrup over entire cake starting from outside edges letting syrup absorb into cake.

     

Tip

dust with icing sugar to serve. yummy served warm or cold.

can substitute lemons for limes or use both !!!!
