Ingredients

Museli Bars

  • 70 g dried apricots
  • 30 g sunflower seeds
  • 30 g pumpkin seeds
  • 100 g craisins (dried cranberries), or dried fruitof choice
  • 50 g Shredded coconut
  • 40 g sesame seeds
  • 35 g Rice puffs - Health Section, or 50g regular rice bubbles
  • 180 g unsalted butter
  • 140 g Rice malt syrup
  • 120 g coconut palm sugar
  • 200 g rolled oats
  • 1 pinch salt

Recipe's preparation

    Museli Bars
  1. 1. Preheat oven to 160 degrees celcius and line a slice tray with baking paper

    2. Chop apricots/dates (or preferred fruit) 2 seconds/speed 7 and set aside

    3. Place butter, syrup and coconut sugar into TMX bowl 6 min / 100 degrees celcius/speed 2

    4. Add all remaining ingredients

    5. Mix until evenly combined 2 speed (2 min approximately)

    6. Pour mixture into slice tray and spread evenly with wet hands or silicone spatula as the mixture can be quite warm to touch.

    7. Compress until firmly packed (approx 1.5 cm thick)

    8. Bake in a preheated oven for 15-20 min or until golden on the top

    9. Cool for 10 min before lifting onto a chopping board

    10. While still warm cut into desired size bars - at this point it may crumble a little. Make your slices and then press back down into tight bars. When it cools to room temp the bars will hold nicely!

I have used low GI sugar alternatives instead of traditional sugars and rice puffs instead of poppy seeds.

A REALLY yummy variation is to use organic extra virgin coconut oil instead of butter tmrc_emoticons.-)tthink

I have tweaked this recipe within an inch LOL - If you like chewy just fridge set - if you like crunchy follow the oven directions! I think this recipe delivers the opportunity to do both! Enjoy guys xox

    So delicious, I substituted the dried fruit for medjool dates, reduced to 50g of coconut sugar and added chia seeds instead of sesame seeds. Thank you for sharing.

    Thanks guys for the thumbs up on this recipe. I have read your comments re the crumbeliness and tweaked accordingly. This new recipe has been tried and tested by me many times and I think the key is that once the bars have cooled at the 10 minute mark - slice - and they will be a bit crumbly but press them nice and tight at this point and they will cool into proper tight museli bars. If it still isn't so for you please let me know because HONESTLY the taste is A-M-A-Z-I-I-N-G!!! Please Enjoy! x

    Loved these muesli bars. thankyounfor the recipe. The only thing I didn't like is how crumbly they are. still really yummy and will definitely make again  tmrc_emoticons.)

    Hi and thanks for trying my recipe!!! Ovens can vary a fair bit. I am thinking either the oven was too hot or they were cooked a fraction too long? The pre cooked mixture should be dense and sticky and that's why moist hands are needed. It also needs to be pressed and packed down nice and dense. Either cook for less time or add extra moisture via dash of apple juice or butter or even add some dates. I have had s some recipes go dry when the TMX underweighs the rice puffs because they are so light the scales misinterpret. You could also try less dry ingredients and a handful more fruit pre soaked in juice or water. Will be a trial and error to get it right for your kitchen equipment. Hope this helps? Will be keen to hear how your next batch goes.

    Love the ingredients & it taste yummy but how do you stop the slice from breaking up 

    when cutting.....need advice as I am a beginner Thermo & have basically just started cooking.
