Ingredients

Base

  • 90 grams walnuts
  • 70 grams Shredded or Dessicated Coocnut
  • 70 grams Cashews, can be soaked overnight
  • 2 tablespoons coconut oil
  • 2 tablespoons cacao powder
  • 1/2 tablespoon natural sweetener of choice, I used real Maple Syrup
  • 1 pinch Celtic Sea Salt

'Nougat' Filling

  • 100 grams Cashews, can be soaked overnight
  • 175 grams coconut milk, I made my own
  • 70 grams coconut oil
  • 50 grams Natural Sweetener of choice, I used real Maple Syrup
  • 30 grams vanilla extract

Caramel Filling

  • 220 grams Dates, soaked in boiling water for 10 mins then drained
  • 65 grams coconut milk, I made my own
  • 50 grams coconut oil

'Chocolate' Topping

  • 75 grams coconut oil
  • 40 grams cacao powder
  • 60 grams Tahnin, I made my own
  • 30 grams Natural Sweetener of choice, I used real Maple Syrup
  • 1 pinch Celtic Sea Salt

Recipe's preparation

    Base
  1. Add all Base ingredients to the bowl and mix on speed 5-6 for 1 minute, you may need to scrape the mixture down once or twice.

  2. 'Nougat' Filling
  3. Without washing the bowl, place all ingredients in to bowl and blend on speed 4-5 for 1 minute, or until smooth and creamy. You may need to scrape the bowl down during this step.

    Pour this over the base and pop back in the freezer for at least 20 minutes

  4. Caramel Filling
  5. Again, without washing the bowl, place all ingredients into bowl and blend on speed 4 for 2 minutes, or until smooth. You will need to scrape this down 3 times whilst blending.

    Carefully spread over the Nougat Filling layer then re-freeze until firm (approx 2 hours)

  6. 'Chocolate' Topping
  7. If your coconut oil is solidified, then place it in the bowl for 1 minute and 30 seconds/50 degrees/speed 2.

    Then add the remaining ingredients and blend on speed 5 for 30 seconds.

    I found this a little too thick to get a 'pretty' result like the Merry Maker Sisters so I just tipped it all over the top of the Caramel Filling and it was still divine!

    This topping will freeze as it hits the caramel topping so you can serve immediately! Or, cut into small squares and keep in the freezer.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
