Ingredients

  • 315 g Butternut Pumpkin no skin, No seedss, Cut roughly into 3cm
  • 280 g Red Apple - Skin off, Cored, cut into quarters
  • 130 g salted butter, cubed, Room temperature
  • 90 g brown sugar
  • 2 eggs
  • 1 banana, Very ripe
  • 110 g Greek yoghurt
  • 1 tsp vanilla extract
  • 60 g Maple syrup
  • 10 g Molasses or treacle
  • 300 g plain flour
  • 1 tsp baking soda
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 1 tsp Nutmeg

Recipe's preparation

  1. Preheat oven to 180C or 350F

    Add pumpkin to bowl chop 5sec/speed 6, scrape bowl

    Cook pumpkin 6 min/100c/speed 2

    Grease and line bread/loaf tin

    Lid off - be careful of steam- let bowl and pumpkin cool to 50c

    Puree pumpkin 3 sec/speed 8, scrape bowl, repeat 3 sec/speed 8 set aside in another container

    Add Apple to bowl cut 1 sec/speed 5 set aside with pumpkin

    Clean and dry bowl and lid

    Mix butter and brown sugar 30 sec/speed 4, scrape bowl

    Keep TM on speed 4, add eggs through MC hole and mix 10 secs

    Add bananas, yoghurt, pumpkin and apple mix, vanilla, maple syrup and molasses into bowl with egg/sugar/butter and mix 4 sec/speed 4

    Add flour, baking soda, baking powder, cinnamon and nutmeg to bowl

    Mix all ingredients together 14 sec/speed 5

    Pour into greased and lined bread/loaf tin

    Bake for 1 hour 10 mins

    Cooked when wooden stick exits clean

     

    Cool for 10mins in cake tin on rack before turning out to cool

     

     

Tip

Note- I used red apples that were soft/old skin that my kids wouldn't eat, a banana I froze because it was too ripe for them and a pumpkin I 'found' in the bottom of my fridge.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
