  • 250 g carrot, washed and trimmed
  • 1 apple, cored and quartered
  • 300 g plain flour
  • 200 g sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 80 g sultanas
  • 40 g dessicated coconut
  • 3 eggs
  • 180 g oil, flavourless
  • 2 tsp vanilla

Recipe's preparation

  1. 1. Preheat oven to 180° C. Prepare a large muffin tray.

    2. Cut carrot into chunks and place in TM bowl. Chop for 2 secs on speed 5. Add apple quarters and chop them for a further 3 secs on speed 5. Scrape down sides of the bowl. 

    3 Add remaining ingredients to the bowl and mix on interval speedDough mode"Dough mode" for 60 secs.

    4. Spoon into large muffin patty pans.

    5. Bake for 25- 30 mins until skewer comes out clean.

Tip

This recipe makes 12 large muffins or 18 small muffins. Be sure to adjust the cooking time for smaller muffins

    Just made this. Didn't have muffin cases so made a square cake and sliced it up. Very yummy!

    Great recipe, these were super yummy and filling.

    I halved the sugar in these easily and they were sweet enough for us. Oil could definitely be replaced with yoghurt or at least half replaced. Dates could be an alternative to the sultanas too. Topped with pumpkin seeds here also!
