Mum’s Shortbread
Shortbread
- 200g unsalted butter, Cold and cubes
- 90g caster sugar
- 260g plain flour
- 60g rice flour
- 1 tsp baking powder
- 1 pinch salt
- 1 tsp Vanilla Bean Paste
Lemon Glaze
- 1 lemon, Juiced
- 1 --- cup icing sugar, Sifted

- Place all ingredients into bowl and mix 10-20sec/sp6 - should resemble biscuit crumbs
- knead"Dough mode" 30-40sec until it just comes together as a dough
- divide dough into 2 lots and roll each into a a log approx 4cm in diameter - cover with glad wrap and refrigerate for at least 30min
- slice into discs about 1cm thick and lay out on a biscuit tray and prick tips with a fork
- Bake at 160deg for 20-25min until slightly browned
- "No counter-clockwise operation" allow to cool on a rack
- "Closed lid" dust with icing sugar or coat with lemon glaze
- Juice lemon and run juice through a sieve and add to icing sugar - stir well with a fork or add to clean tm bowl and mix sp2 until smooth - if you want thicker glaze, add more icing sugar
- Sit cooled shortbread on a cooling rack with a tray beneath - spread lemon glaze over tops of shortbread and allow to set

Tip
The dough can be made ahead of time and kept in the fridge. Just bring out of the fridge for about 10-15mins before slicing it.
I also find that cookies are best baked at baked a few days ahead of when you plan to serve them.
Shortbread will keep for about 3wks in an airtight container.
I have tried so many shortbread recipes and I have finally come up with this one. It’s a combination of about 3 different recipes and cooking times. I love it and I hope you do also!
