  • 20 piece Dates pitted
  • 235 grams water
  • 1 tsp Bi Carb Soda
  • 1 tbsp Butter
  • 1 egg
  • 50 gram apple puree, or 1/2 apple
  • 120 gram Self Raising Flour, I used gluten free
  • 1/4 tsp ground cinnamon, 1 drop doTERRA cinnamon essential oil
  • 1/4 tsp ground cardamon, 1 drop of doTERRA cardamon essential oil
  • 2 dash vanilla extract

Recipe's preparation

    'NOT SO STICKY' DATE MUFFINS
  1. Add dates and water and cook for 5 mins on 90deg, speed 4. Once cooked, chop speed 7 for 5 sec. Add bicarb soda and stir for 3 sec on speed 3 (will froth up).  Transfer to bowl to cool. 

    Add apple and puree on speed10 for 5 sec.  Add egg and butter, whisk for 30 sec on speed 10.  Add puree and combine for 5 sec on speed 5.  Add flour and spices and combine for 5 sec on speed 5 (don’t overwork).

    Pre heat oven to 160 deg.  Lightly spray wean meister pods or mini muffin tray and fill to 2/3.  Bake for 20-25 mins, or until the muffins spring back when you touch them.  Cool on a wire rack and dig in!

Tip

These freeze well so make a double batch and just thaw out to enjoy over and ove again.
