Ingredients

Nanna E, Raspberry Shortbread

  • 120 grams Butter
  • 120 grams raw sugar
  • 2 egg yolks, reserve whites
  • 175 grams self-raising flour
  • 3 heaped tablespoons Jam
  • 2 egg whites
  • 100 grams raw sugar
  • 120 grams dessicated coconut

Recipe's preparation

  1. Add Butter and Sugar ( Normal sugar will work fine, but a finer sugar such as castor sugar would be better)
    You can mill your own sugar if you wish.
    Mix - 8 Seconds, Speed 4
  2. Add Egg Yolks, Mix - 8 Seconds, Speed 4
  3. Scrape down the Sides.

    Add in SR Flour

    Mix 8 Seconds Speed 4
  4. Now prepare your tin. Approx size 20cm x 30 cm. Either Grease with butter and Dust with flour, or Line with Baking Paper.
    Press mixture into a Slice Tin, till covering the bottom and is even.
  5. Wash and Dry your TM Bowl ready to make the topping.

    Now it is time to Spread your jam over the base mixture. I use approx 3 tablespoons but hey adjust it to your taste, you may wish to have more, you may want to use less.
  6. Now the topping:

    Add the Reserved Egg Whites to your TM Bowl. Beat approx 1 minute speed 5. If you can get them a bit stiffly it gives better results, but if not that is also fine.
  7. Add in the 100 grams of Sugar

    Mix 30 Seconds Speed 4
  8. Add in The coconut, mix till combined this takes about
    15 Seconds speed 3
  9. Spread your toppng over the base and jam mixture in your tin. Spread out evening using a fork.

    Bake approx 180 deg C

    20 to 30 minutes - pending your oven adjust to suit.

    Once baked let sit for 10 to 15 minutes before taking out of the slice tin. Enjoy, I know i have enjoyed converting my Loved ones recipe.

Tip

This is lovely with Raspberry Jam, but it is versatile, any jam can be used.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
