Ingredients

Biscuit

  • 125 grams Butter, melted
  • 175 grams castor sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 250 grams Self Raising Flour
  • 35 grams Corn Flour
  • 1/4 teaspoon salt

Strawberry or Raspberry Jam for filling

Recipe's preparation

  1. 1. Melt butter 50 seconds, Sp 3 50 degrees

    2. Add Sugar, egg and essence and mix 10 seconds, Sp 4 

    (you can add all the ingredients at this step if you wish)

    Scrape down the sides

    3. Add flour, corn flour and salt and mix Sp 4 until combined, you may need to scrape down the sides.

    4. Roll into balls, make small dent in centre and add jam. Bake in moderate oven for 15-20 minutes

     

     

Tip

I have used this biscuit recipe for choc chip and peanut biscuits as well. It makes a good crunchy biscuit!

    Thanks for sharing this recipe. I had a recipe for Jam biscuits in an old cookbook and wondered how I would make them in my new thermie. i followed this recipe and the biscuit mixture was perfect before they went into the oven. I mixed for 20 seconds at Step 3. Delicious! Thanks!!  tmrc_emoticons.)

    I've failed mine tmrc_emoticons.(I ran out of castor sugar so replaced some with raw sugar. Mixture wasn't quite right at the end - too crumbly to mix into balls. Added a teensy bit more melted butter and it came together just enough to roll into crumbly balls which then spread on the tray and joined up. Hoping they will still taste ok when they finish cooking
