Cookie Mixture

  • 150 grams Plain Flour.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 75 grams rolled oats
  • 125 grams Butter
  • 100 grams raw sugar
  • 75 grams Dark Brown Sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 50 grams pecans
  • 75 grams dried cranberries
  • 150 grams White Chocolate Chips/Nibs

Recipe's preparation

  1. 1. Preheat Oven to 180c/170c fan-forced and line baking tray with baking paper. 

     

    2. Chop Pecans, 3 sec / speed 4.  Once Roughly chopped, put aside.

     

    3. Mill raw sugar, 3 sec / speed 10 (caster sugar grade).

     

    4. Cream butter and sugars, 1 min / speed 4.

     

    5. Add egg and Vanilla Essence and stir, 30 sec/ speed 4.

     

    6. Add dry ingredients (except for pecans) and stir 50 sec / Dough mode"Dough mode" .

     

    7. Add pecans and stir 20 sec / Dough mode"Dough mode" , or until folded through cookie dough.  

     

    8. Roll into Tablespoon size balls of dough with hands, and place on your prepared baking tray, leaving space between cookies for spreading.  Squish down with a fork. 

     

    9. Cook for 15 mins - When ready, cookies will be pale gold, but too soft to lift straight away.  Leave to cook for at least 5 miutes, then remove with a spatula and allow to cook completely on a rack.

    Made these to take to work for morning tea tomorrow. They are quick and easy to make. I had all the ingredients on hand so that was convenient. I added slivered almonds and left out the brown sugar and they are definitely sweet enough without it. I will make them again.

    These are a super sweet so I left out the brown sugar. I don't believe it's needed.

    I also left out the nuts due to allergies.

    What a yummy biscuit, we will certainly be making these again.

    These are a huge hit every time I have made them. They don't last long and are super quick and easy to make. I don't add the brown sugar or nuts.

    Delicious! Easy to follow recipe. Used walnuts as didn't have pecans. Cooked in 12 mins.
