Ingredients

Choc Chip Cookie

  • 400 g almonds
  • 40 g coconut oil
  • 120 g coconut sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp Himalayan salt
  • 180 g chocolate, broken into small pieces (recipe below)

Chocolate

  • 200 g cocoa butter
  • 100 g Coconut Syrup
  • 60 g cacao powder
  • pinch himalyan salt

Recipe's preparation

    Choc Chip Cookies
  1. 1. Preheat oven to 180C and cover a baking tray with baking paper or a silicon mat.

    2. Place almonds in the Thermomix bowl and grind on 10 seconds / speed 9. Scrape down bowl.

    3. Add coconut oil and mix for 10 seconds / speed 9. Scrape down bowl.

    4. Add coconut sugar, eggs, baking powder and himalyan salt and mix for 10 seconds / speed 4 - 5. Add chocolate and mix for 4 seconds / Counter-clockwise operation"Counter-clockwise operation"  speed 4

    6. Spoon heaped teaspoon sized balls onto the tray and allow room for spreading

    7. Bake for 10-12 minutes or until browned.

    8. Cool on the tray for 5 to 10 minutes or until they are firm enough to transfer to a cooling rack.

  2. Chocolate
  3. 1. Chop cacao butter into chunks and place in Thermomix bowl. Mill for 10 - 20 seconds / speed 8

    2. Cook for 10 minutes / 37C / speed 2. Scrape down sides towards end of cooking time to ensure all is melted

    3. Add coconut syrup, cacao powder, vanilla seeds and salt and cook for another 10 minutes / 37C / speed 2

    4. Mix for 10 seconds / speed 5 to ensure coconut syrup is evenly distributed

Tip

You will end up with extra chocolate that you can use/eat later

    This is our absolute favourite cookie recipe we've ever made! Seriously, they never last longer then a few days because they just get enhaled.

    I haven't tried making the chocolate before, we've always just used dark chocolate we've had in the pantry and we generally only do about 80grams of the coconut sugar.
