Ingredients

Chocolate

  • 80 g cocoa butter
  • 40 g Coconut Syrup
  • 20 g cacao powder

Coconut Choc Chunk Bars

  • 50 g coconut oil
  • 60 g honey
  • 2 eggs
  • 60 g coconut cream
  • 1 vanilla bean, seeds scraped
  • 70 g Coconut Flour
  • 1/2 tsp baking powder
  • 1/4 tsp Himalayan salt
  • 90 g chocolate, cut into small chunks

Recipe's preparation

    Chocolate
  1. 1. Chop cacao butter into chunks and place in Thermomix bowl. Mill for 10 - 20 seconds / speed 8

    2. Cook for 6 minutes / 50C / speed 2. Scrape down sides towards end of cooking time to ensure all is melted

    3. Add coconut syrup, cacao powder and salt and cook for another 6 minutes / 40C / speed 2

    4. Mix for 10 seconds / speed 5 to ensure coconut syrup is evenly distributed

    5. Allow chocolate to cool for approx 30 minutes (until the temperature indicator turns off)

    6. Heat chocolate for 2 minutes / 37C / speed 2. Mix for 10 seconds / speed 5 to ensure coconut syrup is evenly distributed

    7. Pour chocolate into a 15 x 5cm dish lined with baking paper and place in the freezer for 30 - 60 minutes to set

    8. Remove from freezer and cut into chunks with a knife

  3. 1. Preheat oven to 180C. Line a baking dish (20 x 20cm) with baking paper

    2. Place coconut oil in Thermomix bowl and melt for 1 minute / 60C / speed 2

    3. Add honey, eggs, coconut cream and vanilla seeds and mix for 20 seconds / speed 3

    4. Add coconut flour, baking powder and himalayan salt and mix for 10 seconds / speed 3

    5. Add chocolate and mix for 5 - 10 seconds / Counter-clockwise operation"Counter-clockwise operation" speed 1.5

    6. Spoon mixture into tray and press down to flatten. Bake for 15 - 20 minutes until golden brown

    7. Melt remaining chocolate on top of bars once cooked

Tip

To make egg free you could use 2 chia eggs 

1 chia egg is 1 Tbsp Chia seeds milled mixed with 3 Tbsp water
