Muesli Bars

  • 2 tablespoons chia seeds
  • 40 grams water
  • 400 grams rolled oats
  • 300 grams Dried Fruit
  • 250 grams liquid, (plain water or a mixture of juice and water)

Recipe's preparation

  1. Preheat oven to 180C.

     

    Put the chia seeds into the 40g water in a small bowl and allow to sit for a few mins.

     

    Put all ingredients in TM bowl at speed 6 for 30 seconds.

     

    Scrape onto a baking tray lined with baking paper and spread by placing a sheet of baking paper over the mixture and using a rolling pin to flatten out to desired thickness.

     

    Bake for 20-30 mins or until desired texture is reached! 

     

    Cool on a cake rack and cut into pieces. Best kept refrigerated if you won't be using them within a few days.

Tip

Experiment with whatever dried fruit you have in the pantry. I find it works well with at least 50g dates for texture and sweetness. 

 

Substitute some of the rolled oats for nuts or shredded coconut.

 

My toddler LOVES these and mummy is happy that it is all natural with no added sugar.

    Hi Mattnzoe. Thanks for your feedback. It is quite a dense mix, perhaps try chopping the fruit separately and leaving the oats whole if you prefer a different texture. If you are finding them dry, you can reduce the baking time, as they don't particularly need to be cooked it is just to set the mixture and make it crunchy if that's how you like it. Also, using Mejool dates adds moisture to the mix. I hope that helps. Please let me know how you go!

    I love the flavour and for the most part the texture. But mine were quite dense and seemed a bit dry. Any suggestions on what I could do to remedy this?
