Ingredients
- 60 g Butter, cubed
- 100 g sugar
- 80 g brown sugar
- 1 egg
- 1/4 tsp vanilla extract
- 110 g plain flour
- 35 g self-raising flour
- 1/4 tsp salt
- 1/2 tsp bicarb soda
- 75 g rolled oats
- 40 gchopped walnuts
- Sifted icing sugar to dust

Preheat oven to 190.
Add butter and sugars to TM bowl and cream together 30 sec / Speed 4 until well combined.
Add egg and vanilla through hole in lid and continue to blend on Speed 4 for a further 30 sec.
Add flours, salt, bicarb, rolled oats and walnuts and set TM to closed lid "Closed lid" . Mix 1 minute on interval speed "Dough mode" .
Place teaspoonfuls of mixture on oven trays lined with baking paper and place in oven for 10-12 minutes.
Trasfer biscuits to wire rack and allow to cool before sifting with icing sugar.
Tip
Delicious for kids lunch boxes as a healthy snack.

Really tasty biscuit. I used ground walnuts (milled in Thermie) and rolled them in icing sugar before baking. You could easily reduce the sugar content, which I will next time. Thanks for posting!
Did you put the ground walnuts aside or keep them in while creaming the butter?
Lovely simple biscuit. I made then with only 75g sugar and did a mix of almonds and cashews instead of walnuts and they were delicious!

I halved the sugar they still taste good and my kids love it. Great for school.
Can they be made without the walnuts as we cant have nuts at school?
These went down really well in our house. I doubled the recipe as suggested but didn't double the sugar as I felt it would be too much. They turned out perfectly for our tastes and the kids loved them! I also milled the walnuts as others did - my kids won't eat nut chunks. Thanks so much!

Great! They're not too sweet and my girls (6 & 3) love them. I ground the walnuts, too, as per a previous suggestion.
I ground the walnuts before starting the recipe, so the kids would be happy to eat, they are really yummy, should of taken the tip & made two batches.
