Ingredients

BISCUITS

  • 180 g unsalted butter
  • 60 g icing sugar
  • 60 g custard powder
  • 1 level teaspoons baking powder
  • 180 grams plain flour

VANILLA BUTTERCREAM

  • 100 grams Butter, Softened
  • 126 grams icing sugar, (1 cup)
  • 2 level tsp Vanilla Bean Paste

JAM

  • I used Homemade Brandied Apricot Jam and strawberry but any flavoured Jam can be used

Recipe's preparation

  1. BISCUITS

    Preheat oven to or 180 degrees or 160 fan forced.

    1. Add butter to mixing bowlClosed lid"Closed lid" cream for 40 seconds, Sp 4. Scrape down and repeat again.

    2. Add to the mixing bowl Closed lid"Closed lid" icing sugar, custard powder, baking powder and plain flour Mix for 20 seconds Sp 5. Scrape down and repeat for 15 seconds Sp 5 MC on. The mixture will be soft.

    3. Roll into (12) 40g balls Place on prepared trays with baking paper. Press down with the back of a fork to leave an indent and bake for 20mins. or until golden brown.
    clean the bowl.

    VANILLA BUTTERCREAM

    Add all the ingredients to the mixing bowl Closed lid"Closed lid" and mix for 10-20 seconds or until the mixture forms a paste the consistency of thick icing. Spoon into a piping bag fitted with a star nozzle.

    TO ASSEMBLE

    Place a teaspoon of jam on the base of half the biscuits. Pipe buttercream in a circle onto the base of the other half of the biscuits. Gently press one of each biscuit together to form a melting moment. Dust with icing sugar before serving.

    Makes 12 large biscuits
    6 Melting Moments (the biscuits spread out to 8cm once cooked)
