- 1 orange, whole
- 1 egg
- 60 g raw sugar
- 20 g olive oil
- 100 g chocolate chips
- 240 g Milk
- 300 g flour, (I substitute GF Flour)
- 4 tsp baking powder

Preheat oven to 200degC. Grease muffin trays.
Quarter whole orange and chop in TM bowl Sp6/ 6Secs
Add egg, sugar & oil - blend Sp4/ 5secs
Add choc chips, milk, flour & baking powder - "Counter-clockwise operation" Sp4/ 2-3 Secs or until only just mixed. DO NOT OVERMIX.
Spoon into 12 muffin tray.
Bake 15-20 minutes @ 200.

This is a recipe I used to make in traditional method when children were at school - great for school lunches and freeze well.
This recipe converts to gluten free with 280g of Gluten Free flour although I find they go stale quickly so need to freeze same day.

Fab recipe thanks! The only change I made was I used an orange without the rind because I had used it in another recipe. I was impressed that they still turned out with plenty of orange flavour despite taking the rind off. Lovely texture, light and fluffy.
