Paleo Banana and Blueberry Bread
Paleo, dairy free, gluten free, refined sugar free
- 300 g almond meal
- 4 bananas
- 3 eggs
- 1 tsp vanilla extract
- 80 g sweetener, (Maple syrup/honey/rice syrup)
- 60 g coconut oil, melted
- 1 tsp baking powder, gluten-free
- 1 tsp cinnamon
- 100 g blueberries, fresh or frozen

- If using whole almonds, place them in the TM and blend on speed 10 for 5-10 seconds (check consistency half way through). Remove from TM and set aside.
- Place coconut oil in TM and melt for 3mins/40 temp/"Gentle stir setting" - check along the way and stop when oil has melted.
Add bananas, eggs, vanilla extract and sweetner to the melted coconut oil and blend 10sec/speed 5. Scrape down the sides. - Return the almond meal to the TM and add baking powder and cinnamon to the wet ingredients. Mix 10sec/2.5speed. Scrape down sides and repeat 10sec/2.5speed.
Weigh blueberries into the bowl and gently fold through with the spatula until just combined. - Put batter into a lined bread loaf tin and bake for 55mins on 170 degrees on the lower rack in your oven. The exact time will depend on your oven. It's ready when golden on top and when an insert skewer comes out clean.
Leave in the tin a few minutes before cooling on a cake rack. Let it cool for about 20 minutes before slicing it.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
