  • 5 tbsp Raw Honey
  • 3 tbsp coconut oil, Melted
  • 1 tsp Pure Vanilla Extract
  • 4 slices Fresh pineapple, 1/2 inch thick
  • 15 Fresh Raspberries

Recipe's preparation

    Paleo Upside Down Cake
  1. Preheat oven to 175 C (350 F).

    Peel and core pineapple slices.

    Place 1 1/2 tbsp of honey in 8" round cake tin. Arrange pineapple and raspberries in decorative pattern. Place in oven 15 mins.

    Mix almond flour and baking powder in Closed lid"Closed lid" 3 sec/sp 4. Set aside in a small bowl.

    Cream eggs and remaining honey using TM whisk 30 sec/sp 4. Add melted coconut oil and vanilla. Whisk 6 sec/sp 4.

    Remove whisk from Closed lid"Closed lid" and blend flour mix into mixture 5 sec/sp 5.

    Remove tin from oven and spread cake mixtrue evenly over pineapple.

    Bake 35 mins.

    Stand in tin 10 mins before turning out onto plate to cool.

    I have also used home-dried apricots (soaked in boiling water for a few minutes) instead of pineapple and raspberries. If you wish to have a bigger, thicker cake, double the cake recipe but not the fruit and honey in first step.
