I made this into mini muffins and they were fantastic. I used canned peaches and added some extra juice as the mixture looked dry. I also used desicated coconut as I had no shredded and left the extra coconut on the top off. Turned out lovely, took about 15-20 mins to cook at 180.
Great recipe! Had a large peach that needed using and it turned out to be just the right amount. Yummy!
These are fantastic! I had an abundance of fresh peaches so I used those. I love the coconut as well. im just making my third batch now! Thanks for sharing.
DELISH delish!
Used fresh nectarines and coconut oil. So yummy and really easy. I will double the recipe next time.
Thanks for a great recipe
Very tasty. I have a large/deep muffin tray (cooks 12), so i made the recipie 1.5x the ingredients, so i could fill the whole tray. Worked perfectly. Thanks for sharing
Very nice! Perfect way to use up the last peach in the fruit bowl that was looking a bit sad!

Love this!
I replaced the sugar with Rapadura, the peaches with tin apricots (all I had) and the veg oil with coconut oil. Made them in mini muffins for my little one and they are delish!
Thanks for your feedback @ThermieloverSue So glad you liked them! They are easy and are easily adaptable!

I made these today with a small tin of pineapples, reserved the juice for a smoothy . It was simple and easy and my kids loved it (and me too! LOL) Thank you for sharing!
