Ingredients

Peach and Almond Dessert Cake

  • 180 g caster sugar
  • 100 g unsalted butter, Softened
  • 1 level teaspoons vanilla extract
  • 320 g flour, Italian 00
  • 1 heaped tsp baking powder
  • 200 g Milk
  • 250 g canned peaches, Sliced
  • 25 g flaked almonds
  • 1 level tbsp Maple Syrup, pure

Recipe's preparation

  1. Preheat Oven 180 degrees
  2. Line 20cm Springform Cake Pan
  3. Insert Butterfly whisk
  4. Add castor sugar and butter. Speed 4 / 30 sec. Scrape down sides and repeat for 10 seconds
  5. Remove butterfly whisk and add Vanilla Extract, Flour, Baking Powder and Milk. Combine speed 5 / 30 seconds
  6. Add 2 eggs and mix speed 5 / 10 seconds
  7. Pour cake batter into cake pan. Arrange sliced peaches placing them on the batter (flower pattern) and then sprinkle with almonds and bake 40 min / 180 degrees.
  8. Remove from oven and drizzle with Maple Syrup and bake for a further 10-15 minutes until golden.

Tip

Serve warm with custard for a beautiful desert.
