Ingredients

Peanut Butter Slice

Base

  • 250 g plain biscuits, e.g. Vanilla Wine
  • 250 g Butter
  • 1 tsp almond essence, Optional
  • 250 g Peanut Butter
  • 160 g icing sugar

Icing

  • 150-200 g dark chocolate
  • 1 tbsp coconut oil, Optional

Recipe's preparation

    Base
  1. Add the biscuits to the bowl and crush for 10 seconds on speed 5.
  2. Remove crushed biscuits and set aside.
  3. Add the butter and melt at 75°C, speed 2 for 2 minutes 30 seconds.
  4. Add the peanut butter and almond essence (optional or replace with vanilla essence). Melt 60°C, speed 2 for 2 minutes.
  5. Add in icing sugar and the crushed biscuits. Blend for 15 seconds on speed 5.
  6. Spread evenly into a slice tin and refrigerate until set.
  7. Icing
  8. Add chocolate and coconut oil. Melt for 2minutes and 30 seconds on speed 2
  9. Once completely melted spread evenly over the slice and put back into the fridge until set.

Tip

The coconut oil used in the chocolate icing is optional as it provides a smoother more icing like texture that is easy to cut. However, leaving it out will give a crispy chocolate top that some people prefer.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
