Ingredients

  • 2 eggs
  • 100 g Rice Bran Oil
  • 120 g wholemeal flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 50 g raw sugar
  • 1 teaspoon mixed spice
  • 1 1/2 teaspoon cinnamon
  • 220 g Pears - Peeled & diced, about 2 pears
  • 150 g sultanas
  • 40 g walnuts chopped

Recipe's preparation

    Pear and Walnut Cake
  1. Preheat oven to 180 degrees. Line a round cake tin with baking paper

    Crack eggs into TM bowl, add oil. Blend 5 secs/speed 4. Set aside. Rinse and dry bowl.

    Add flour, baking soda, baking powder, sugar and spices to TM bowl. Blend 5 secs/speed 5. Scrape down the side of the bowl.

    Add pears, sultanas and walnuts. Mix 3 secs/ speed 3.

    Add blended oil and egg mix. Mix 3 secs/speed 4

    Pour mixture into prepared cake tin and bake in oven for 50 mins.

    Leave cake to rest in tin for 10 minutes then turn out on wire rack to cool.

Tip

I never ice this cake. It is lovely and moist due to the pears. My whole family loves this healthy and yummy cake just as it is.
