- 3/4 level teaspoons baking soda
- 3/4 level teaspoon baking powder
- 1/2 level teaspoon sea salt
- 1 level teaspoon cinnamon
- 1/4 level teaspoon Nutmeg
- 85 grams almond meal
- 30 grams Coconut Flour
Wet Ingredients
- 2 level tablespoons coconut oil, Melted
- 2 eggs, Large
- 2 bananas, Large, Very Ripe
- 75 grams Maple syrup
- 1 teaspoon vanilla extract

Preheat oven to 175 degrees.
Add all dry ingredients in to bowl and mix 10 seconds on speed 7. Ensure all dry mixture is well combined. Empty dry ingredients in to another bowl and set aside.
Without washing bowl; place all wet ingredients in to bowl and mix 20 seconds on Reverse, Speed 3.
Add dry ingredients back in to bowl and combine for 10 seconds on Reverse, Speed 3.
Give it a stir with the spatula to make sure all the ingredients are 'just' combined.
Pour in to a loaf tin lined with baking paper and bake in oven for 45-55 minutes at 175 degrees.
For muffins; yields approximately 11 small muffins, bake for 30 minutes at 175 degrees.
