Ingredients

Cake

  • 340 g Vanilla Cake Mix, (homebrand works well)
  • 150 g Milk
  • 60 g Butter
  • 1 egg

Pumpkin Puree

  • 500 g pumpkin, peeled/chunked
  • 250 g water
  • 175 g Maple syrup
  • 175 g evaporated milk
  • 175 g cream
  • 3 eggs
  • 250 g brown sugar
  • 1/4 tsp Ginger Power
  • 1/4 tsp Nutmeg
  • 1/2 tsp cinnamon

Pumpkin Mousse Topping

  • 100 g Instant Vanilla Pudding Mix, Cottees
  • 250 g cold milk
  • 250 g cream
  • 1/4 tsp ginger powder
  • 1/4 tsp Nutmeg
  • 1/2 tsp cinnamon

Recipe's preparation

    Pumpkin Puree
  1. Preheat oven to 175 deg C. Grease pan 22cm x 33 rectange/square pie dish. Pyrex works well for serving as well.

  2. Cake
  3. Melt butter in Closed lid"Closed lid" , 2min, 100deg, sp 2. Add all other cake ingredients to Closed lid"Closed lid" , and mix 30sec, sp 4

    Pour into greased dish. Set aside.

  4. Pumpkin Puree
  5. Once cool, add all other PUREE ingredients to Closed lid"Closed lid"  and whip 30sec, sp 4.

    Pour gently over cake mixture.

    Bake in oven for 55 -60 min. Centre of cake should not be "jiggly". Test with toothpick, should come out clean.

    Set aside to cool completely.

  6. Pumpkin Mousse Topping
  7. Insert butterfly.Add milk, cream, spices and pudding mix to Closed lid"Closed lid" . Whip sp 4 until a thick creamy consistency is achieved. ie like whipped cream.

    Spread across cooled cake. Refrigerate for 30 - 60 min until completely chilled.

Tip

It may not look like the pumpkin has settled on the bottom, but it will have...have faith. For extra decadence, serve with whipped cream and drizzle with maple syrup, sprinkle with pecans

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
