Ingredients

Swirl Topping

  • 250 g Philadelphia cream cheese, (block)
  • 75 g raw sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 135 g frozen raspberries

Brownie Batter

  • 250 g Butter, chopped
  • 100 g cocoa powder
  • 220 g raw sugar
  • 240 g raspberry jam
  • 4 large eggs
  • 1 tsp vanilla extract
  • 180 g flour
  • 1/4 tsp baking soda

Recipe's preparation

  1. Directions

    Preheat oven to 160 degrees celcius fan forced. Grease a 20 x 30 lamington pan.

    Prepare Swirl Topping

    Grind the sugar for 20 sec on speed 9. Add cream cheese, egg and vanilla and mix for 20 sec on speed 4-5. Set aside.

    Prepare Brownie Batter

    In a clean TM bowl add the butter and cocoa and cook for 2 min at 100 degrees, speed 2. Add sugar, jam, vanilla and eggs and mix for 20 sec on speed 4. Add flour and baking soda and combine for 20 sec on Interval setting. Dough mode"Dough mode"

    Pour batter into dish and smooth the top. Spoon large dollops of the cream cheese topping evenly over the batter, and swirl in with a knife.

    Evenly sprinkle the raspberries over the top. Bake for 30-35 min, or until skewer comes out clean with a few moist crumbs attached. Cool completely in pan on wire rack and try not to eat the whole thing in one go.....

    This turned out delicious! Rich and chocolatey with the lovely tartness of the raspberries tmrc_emoticons.) My Hubby has almost polished it off. I have frozen some for him to take to work in his lunch box as well! It freezes well.

    So yummy but mine turned out more as a cake or slice than as a gooey brownie. Next time, I may try to double the swirl topping so every slice will have a proportional amount of cake to cheesecake topping tmrc_emoticons.;) What I'm saying is the cheesecake bit was great! Thanks for posting!

    I had high expectations, given the comments left here, but was disappointed.  I thought the jam would make it nice & fudgey (but it had a cakey texture, which is not what you want from a brownie) and it wasn't chocolatey enough for me.  It did look great, though.  I think I will stick with my favourite recipe of many years, Chocolate Heaven (but thanks, as it was the push I needed to finally convert it to TM method!).

    I made this on Sunday. Absolutely delicious. The mixture is devine. I used a normal slice tin & it took over an hour to cook at the temperature as stated.. I know brownies are meant to be gooey to a point.

    Anyway, love the flavour, might add the cream cheese mix in the middle & on top of the mix to get more of the yummyness through it.

    Can't wait to make it again tmrc_emoticons.-)
