Ingredients

Fudge layer

  • 200 grams cashew nuts
  • 100 grams Desiccated Coconut
  • 60 grams coconut oil
  • 8 --- medjool dates pitted
  • 20 grams Baobab Powder, Optional
  • 20 grams Maca powder
  • 15 grams Vanilla Paste
  • 1/2 - 3/4 teaspoon Himalayan salt

Chocolate Layer

  • 50 grams cacao butter or coconut oil
  • 50 grams cacao powder
  • 2 teaspoons honey
  • 1/4 tsp Himalayan salt
  • 1 tbsp Bee pollen

Recipe's preparation

    Method
  1. 1. Place all ingredients into Thermomix and blend 30 sec/sp7

    2. Scrape down and turn the mix from the base

    3. Blend again 1 minute/sp7

    4. Scrape down and turn mix from base.

    5. Blend 1 minute/sp7

    Always good to use the spatula to ensure that the mix is being fully incorporated from the side of the bowl.

    Tip out into a lined square dish - the smaller the dish the deeper the fudge and press down flat.  I made a double batch to get the depth that is in the picture.

    Place in Fridge whilst you make the chocolate layer

     

    For the chocolate layer

    Melt the cacao butter in Thermomix at 37c until totally melted, add the cacao powder and honey and blend for a moment.  This becomes a spreadable chocolate and sets well.  Spread over base and sprinkle with bee pollen.

    Alternatively you can melt a bar of your favourite chocolate and use that. 

    Place in Fridge until set, cut into pieces and keep in the fridge.

Tip

I added a tsp of Baobab to the chocolate of one batch and it made more of a ganache which set nicely tmrc_emoticons.)

The Baobab can be replaced with either Mequite or Lucuma or left out totally - it won't alter the taste very much. 

Next batch I make I am going to add 5 drops of Medicine Flower Caramel Essence, will update when that is done but it won't be soon tmrc_emoticons.)

You can use maple syrup in the chocolate if you prefer.

If you would like to make it more caramel you can add another 2 dates, less sugary, use less dates, I have used just 4 dates and it was fine.

I found that a single batch about 1cm (1/2") deep worked the best and adding the caramel was absolutely divine, a great little lift to the whole recipe.
