Red Velvet Cupcakes

  • 310 g plain flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 15 g cocoa powder
  • 285 g castor sugar
  • 180 g vegetable oil
  • 2 eggs
  • 250 g Butter Milk
  • 10 g vanilla extract
  • 10 g Red food colouring
  • 1 tsp white vinegar
  • 110 g COOLED Expresso Coffee

Recipe's preparation

    Method
  1. Pre heat fan forced oven to 180'.

    Add all ingredients in order of being shown. Place lid on and mix on Speed 4 for 15 Seconds, scrape the sides down.

  2. Place the lid on, repeat step on Speed 4 for 15 seconds.
    NOTE do not over mix as this will make the cupcakes have a firmer texture

  3. Place cupcakes into muffin cases (large ones look beautiful) and cook for 25-30 minutes or until a skewer comes out clean.

    ENJOY

Tip

*Using a Cupcake pen (MixShop item) will help to keep your muffin cases looking amazing.
*3/4 filling the cases will make these look more Cafe style for presentation.
*Cream cheese frosting with a dash of lemon juice in the mix will compliment these Red Velvet cupcakes perfectly.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
