Ingredients
Batter
- 225 grams Butter
- 200 grams Chocolate approx 60% Cacao ( to taste)
- 450 grams sugar, Choose your preferred blend or alternative, rapadura and mascobado work well
- 4 large eggs
- 1 level teaspoon vanilla essence, Or equivalent or more to taste
- 200 grams Gluten free plain flour, Use your favourite blend, I use Orgran.
- 50 grams cocoa powder, Best quality, I like Planet Organics or loving earth brands.
Icing
- 200 grams dark chocolate

Add butter and chocolate and melt gently on 5 minutes / 60 degrees / speed 3
add sugar and blend 25 seconds on speed 5. Then on speed 5 add one egg at a time allowing it to be thoroughly mixed through before adding the next. Turn off after last egg blended in.
Measure in flour, vanilla essence and cocoa. Blend on speed 5 for 20 seconds, scrape down sides and blend for a few more seconds if required.
pour in to a lined and greased cake tin approx. 23 cm square. Bake at at 180 degrees for approximately 35 minutes, skewer will come out cleans no top should have the expected springiness of a baked cake. Careful not to over cook to prevent burnt edges which can interfere with the taste.
melt chocolate on 4 minutes / 60 degrees / speed 3. Pour over cooled brownie, allow to set before slicing.
Alternitives use EDC chocolate ganache recipe.
Toppings and and flavourings can be added to taste such as nuts, orange zest, etc.

Keeps well in an airtight container in the fridge for a week (if using ganache may not last as long, check cream use by date). Freezes well. cut into slices before refrigerating or allow to come to room temperature, due to density can be hard to cut when very cold.
