Ingredients

  • 100 grams Dairy Milk Rocky Road Chocolate
  • 30 gram Dessicated Cconut
  • 30 gram mixed nuts eg almond and cashew
  • 80 gram Oat flakes
  • 130 gram Butter cubes at room temp
  • 100 gram caster sugar
  • 100 gram brown sugr
  • 1 egg
  • 1 tsp vanilla extract
  • 130 gram plain flour
  • 1/2 tsp bicarb soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Recipe's preparation

  1. Preheat oven to 180.deg

    Chop rocky road & nuts 2-3 secnds on speed 6. Set aside.

    Grind oat flakes for 3 sec on speed 8. Set aside.

    Place butter, sugars, egg & vanilla into bowl. Mix 2 min speed 3.

    Add flour, oat flakes, baking soda, powder and salt and mix 40 sec on speed 4.

    Add chocolate & nuts and stir for 30sec speed 2.

    Form dough into walnut sized balls and space evenly on the tray. Bake for 10-12 minutes until slightly brown.

    Cool & eat.

    Just made this recipe into a slice. Quite sweet and very crumbly but a gorgeous flavour. Just realized I didn't add coconut!!!  Guess I should have done that with the flour etc!!  Good thing I have half a block of chocolate left to try again. I also used gluten free flour and quinoa flakes instead of oats. But GF daughter still won't be able to eat it as there is wheat starch in the chocolate - humbug!!!
