Ingredients

DRY INGREDIENTS

  • 120 grams rolled oats, (not all are gluten free)
  • 120 grams almonds
  • 10 grams baking soda / bi-carb soda
  • cinnamon, a big dash

CHUNKY STUFF

  • 2 medium carrots, cut into chunks
  • orange peel (zest), from 1/2 orange
  • 40 grams walnuts

WET INGREDIENTS

  • 2 tablespoons coconut oil
  • 20 grams honey
  • 1 dash vanilla essence
  • 100 grams unsweetened apple puree, small tub (aprox 100g)
  • 150g dates

Recipe's preparation

    Super Healthy Carrot Cake, no added sugar, GF, vegan.
  1. Put in all dry ingredients. 

    Blitz on sp10 until a fine flour (aprox 30-45 sec)

     

  2.  

    Add chunky stuff to dry ingredients.

    Chop at sp 6 for around 30-40 secs until chunky stuff is finely chopped throughout mixture.

  3.  

    Add wet ingredients into the jug.

    Chop/Mix on sp 6 for around 1min. Stopping to scrape down sides as needed.

    Should end up with a chunky cake mixture.

  4.  

    Pop into muffin trays and cook for around 20-30mins on 180deg

    These were a good consistency, but i found them lacking flavour a bit, none of the ingredients really stood out. I also didn't need to blend the ingredients for as long as instructed (a 1/4 of the time was good enough).

    This truly is a super healthy recipe! I made it for my in-laws who are vegan and on a special diet and they loved it! Even with the honey and dates it does not taste sweet at all. I also confidently gave it to my toddler as I knew there was nothing artificial in it! The main thing I would do differently is to leave the 2nd lot of nuts and dates chunky, rather than all blended. I think this would give it more texture. I think this would go well with yogurt (or cream cheese). Will make this again, thank you.

    Just a note for this recipe.  Most vegans don't eat honey.  Perhaps some do, but I'd just like to mention it incase somebody is planning on making this for a vegan friend.  Maybe worth checking with them first.
